Spinach Carbonara Pizza

Oh this turned out so yummy - I can't wait to make it again. My husband had fresh pizza dough ready for us too - which was so much better than anything you could buy ready made in the grocery store.

Spinach Carbonara Pizza
1 pkg. refrigerator pizza dough
6 slices bacon
6 oz fresh spinach leaves (about 8 cups)
2 garlic cloves, pressed
1 oz. grated Parmesan cheese (about 1/4 cup)
1c jarred Alfredo sauce (the one from Trader Joe's is amazingly good)
2c shredded mozzarella cheese
fresh ground pepper to taste

Pre-heat oven to 450'. Shape dough into pizza shape. If using a baking sheet, put the dough directly on the sheet at this point, if cooking on a pizza stone in the oven, put dough on the pizza peel and prepare the pizza there. We always cook our pizza on a pizza stone in the oven.

Slice bacon into 1/4 inch pieces, and cook until crisp. Remove from pan and drain on paper towel. Place spinach and garlic in fry pan and cook until spinach is just wilted. Remove from pan and set aside.

Spread sauce on dough, layer on cheeses, and top with spinach then bacon. Bake in oven 7-10 minute or until crust is crispy.
