CHEESEBURGER CASSEROLE
(adapted from a Suzanne Somers' recipe from Fast & Easy)
1 lb ground turkey
1 small onion, chopped
1/3c non-fat plain yogurt & enough 2% milk to equal 1c of mixed liquid
3 eggs, beaten
4c shredded cheddar cheese
Pre-heat oven to 350'. Spray a casserole dish (9x13) with non-stick spray. Set aside.
Brown turkey then add onions and cook until onions are translucent (about 3-5 more minutes). Remove from heat - add milk/yogurt mixture and 3 cups of cheese. Mix thoroughly. Season with salt & pepper. Pour into casserole. Sprinkle with remaining cup of cheese. Bake 20-25** minutes or until cheese begins to brown. Remove from oven and let sit for 10 minutes before cutting/serving.
** the original recipe said cook 15-20 minutes, but I tried 15 then kept adding minutes until it was cooked through. Keep in mind it will seem really wet if you cut into it immediately after removing from the oven - so let it sit for a few minutes to set before cutting.
