Buffalo Wings with Blue Cheese Dip
36 chicken drummettes (I couldn't find them and used drum sticks)
2 tbsp. salt
2 tbsp. paprika
1 tbsp. cayenne pepper (optional)
1/3c hot sauce (we used Tapatio)
2 tbsp. butter
blue cheese dip (see recipe below)
Put chicken in a bowl and toss with paprika, salt & cayenne.
Place oil in a skillet and heat to about 375' (there should be about 2 inches of oil in the pan). Fry 8 or so wings at a time (if you use drum sticks do 4-5 at one time), until crisp - this will take about 10 minutes for drummettes, and 25-30 minutes for drum sticks. Feel free to use a deep fryer if you have one. Remove from oil and drain on paper towels.
Heat hot sauce and butter in a sauce pot on medium low until well combined. Serve this sauce on the side, along with the blue cheese dip.
Blue Cheese Dip
3/4c sour cream
4 oz. blue crumbled blue cheese
2 tbsp. red wine vinegar
salt & black pepper to taste
Combine all ingredients in a bowl. Smash the cheese with a fork until well combined with sour cream and vinegar. Thin with more vinegar if it is too thick.
