I've finally mastered baking sweet potato rounds. I made these last week for the kid when she was sick and they turned out PERFECT! Here are the tricks: 1) even thicknesses in the slices-I used a mandolin, 2) make sure your oven is hot enough-I baked these off at 425', about 10 minutes per side. Ovens vary so don't go far away from your's while these are cooking. A generous sprinkle of kosher salt and you're ready to chow down on these. Next time I think I should make two trays full. They did not last long.
