Valentine's Day Dinner

Yummy in my tummy - I made French Onion Soup tonight for dinner. And I'm pretty pleased with the outcome considering I didn't use a recipe!

4c thinly sliced yellow onion
olive oil
2c white wine
4c chicken stock
1/2 tsp thyme leaves
salt & pepper
Crunchy bread
Shaved Parmesan cheese

Slice onion. Heat oil in stock pot. Add onions and saute until soft, golden, and caramelized. Add 2c white wine (I used Laetitia Pinot Blanc). Cook down for a few minutes. Add chicken stock, thyme, salt & pepper. Bring to a boil. Lower temperature and simmer until onions are completely tender. Pour into bowls. Top with shaved cheese and use bread for dipping.
