Savory Chickpea Snack

I have no problem finding carb based snack foods – I do however have a problem finding things to snack on that are protein based. I discovered this recipe for soy sauce marinated roast chick peas. These were a hit with both the kid & I and didn’t last long in our house. 

These are not crispy, but have a really good taste. You could try adding 10 more minutes to the cook time if you like them crispy. 

Savory Chickpea Snack
1 x 15oz can chickpeas, rinsed & drained, I prefer low sodium or no sodium beans
1 1/2 tbsp soy sauce
2 tsp olive oil
1/2 tsp paprika

Preheat your oven to 425' F. 

Dry chickpeas with a kitchen towel or paper towel. Place them on a rimmed baking sheet. Mix soy sauce, olive oil, paprika in a small bowl. Spread over chickpeas on baking sheet. Gently toss to combine.

Bake for 10 minutes - toss gently with a spatula. Bake 10 more minutes or until lightly browned. Serve warm. Left overs can be refrigerated for up to 4 days.
