Making Vegan Cheeses

As you all know I’ve been diary free for over 2 years now and while there are quite a few options out there for those that can’t or won’t eat dairy products, some things are lacking – like good cheese substitute. Being the dutiful researcher that I am, since I went dairy free I purchased quite a few books on dairy free cooking and have discovered a few “cheeses” made from non-dairy products that are close, though not the exact same. One that I’ve been playing around with, and still haven’t gotten it 100% where I’d like it to be is a vegan Gorgonzola. It’s tofu and coconut oil based with spirulina powder for the “veins”.
