Vegetable Soup



On one of my cooking weekends last year I cooked up a HUGE batch of vegetable soup with homemade chicken stock. In preparing for future lazy days where you just can’t fathom cooking – I froze a large amount of that soup. Smart? Yeah I know! I pulled a few of those frozen packages out the other day, popped them into the slow cooker on low and went to work. Later that evening all I had to do was toast up some sour dough bread and dinner was served! I know, shear brilliance – I’m patting myself on the back still as I write this.
