Ramen Salad

I discovered this salad a few summers ago when we purchased our travel trailer. It works well for a quick meal and tastes great after spending a whole day outside playing. I know we're in winter right now, but this is so yummy it can easily fall under the any time of the year schedule.
½ head cabbage chopped
3 carrots – scrubbed, peeled and grated
2 – packages ramen noodles, crumbled (toss the seasoning packets, you wont need them)
1 cup cooked, shelled edamame
1 avocado – skinned and large dice
1 mango – peeled and large dice (feel free to substitute mandarin oranges)
½ c thinly sliced green onion
Asian vinaigrette (recipe below)

Asian vinaigrette
2/3 c canola oil
1/3 c agave syrup
1/3 c rice wine vinegar
2 tsp soy sauce
¼ tsp sesame oil
Pinch salt & pepper

  • Add salad ingredients together in a bowl, toss gently until combined
  • Top with Asian vinaigrette
  • Serve immediately
  • If you make in advance, mix in ramen noodle crumbles, mango and avocado just before serving
