More Granola



Here’s the second granola recipe in rotation at my house – happy cooking! If you’re just now joining, you can find Version 1 on February 8, 2017.

HEATHER’S GRANOLA VERSION 2
6 c rolled oats – traditional, not quick cook
½ c wheat germ – I prefer honey
¼ c honey
¼ c vegetable oil
2 tsp vanilla
¼ tsp cinnamon
1/8 tsp nutmeg
¼ c coconut flakes - unsweetened
2 c gold raisins

  • Pre-heat oven to 350’F
  • Lightly grease 2 rimmed cookie sheets
  • Mix oats, wheat germ & coconut in a large bowl
  • In a small saucepan, mix honey, oil, vanilla & spices
  • Cook until honey is clear and smooth
  • Add to oat mixture – blend well
  • Spread evenly onto the 2 prepared baking sheets
  • Bake 15 minutes or until golden brown
  • Remove from oven – let cool slightly
  • Mix in gold raisins to still warm granola
  • When completely cool – store in an airtight container

Yield: approx. 7 cups
