Allergy Safe Chocolate

Have you had that moment where you just want something sweet to snack on but for whatever reason just aren’t able to eat it? That would be me ever since I had to eliminate dairy from my diet two years ago. It has turned my creative cooking into an epic battle of the wills – desire for sweets vs need to eat safely due to food allergies. 

Solution? Make my own of course. 

My favorite consists of melting down allergy safe chocolate chips, mixing in something for texture (think rice crispy type cereal, coconut flakes, mini marshmallows or pumpkin seeds). Then you let the mixture set on a waxed paper lined baking sheet and when cool – cut into candy bar sized pieces. Finally – a solution that I can munch on when the urge hits, and take to the movies so I feel I’m able to get my chocolate on without endangering my health!
