Bacon Wrapped Dates

Happy Super Bowl Sunday! I hope you’re ready for a good game. The New Englander in me is thrilled that the Patriots have made it here again!! Go Pats! 

Here’s one last snack recipe I thought you’d enjoy. These are fairly easy to make and a big crowd pleaser. If you’re not a fan of chorizo, you can just wrap the dates in bacon and get them crispy – drizzle with spiced honey before serving. 

And while you're at it - don't forget to BBQ up some tri-tip.

2 ounces chorizo sausage, casing removed
24 Medjool dates, pitted
12 slices of bacon, halved crosswise
  • Slice chorizo crosswise in thirds
  • Half each piece lengthwise, then cut in half, you’ll have 24 strips when you’re done
  • Tuck a chorizo stick into each date
  • Pinch date closed
  • Wrap a strip of bacon around each date, secure with a toothpick
  • Place bacon wrapped dates in a large sauté pan, seam side down
  • Sauté, turning until the bacon is browned on all sides, about 10 minutes total
  • Drain on a paper towel & serve hot
