Happy Boxing Day! Have some Pineapple Salsa

Happy Boxing Day! How about some homemade pineapple salsa to go with your favorite chips? I myself have been craving Mission tortilla chips lately.

PINEAPPLE SALSA

1 c pineapple, diced

1 c bell pepper, diced – choose different colors to the pretty

1 c roma tomato, diced

1/3 c fresh cilantro, chopped

¼ c onion, diced

2 limes

Salt & pepper

1 jalapeno, seeded & diced (optional)

• Mix together pineapple, tomato, bell pepper, onioin, cilantro, lime juice, salt & pepper
• Mix thoroughly
• Serve at room temperature

School lunch idea

So yesterday was the first day back to school for the kiddo. With that in mind here's a school lunch post for all the mom's out there.

When I was younger one of my favorite school lunches was Carl Budding turkey lunch meat stuffed with cream cheese and rolled into a cigar. 

I introduced the kid to these for lunch this past year – and dressed it up with a healthier lunch meat choice. It was a  hit and she loves them as much as I did.
